Day 36 of the 100 days of healthy eating Challenge! Brown channa & roasted veggie bowl in 4 easy steps 1. Soak black/brown channa overnight and pressure cook in the morning and set aside. 2. Slice cauliflower into small florets and sweet potato into roundels, toss with 2 teaspoons of olive oil, place on a tray and grill for 15 minutes, shaking the pan once in between. 3. Deseed tomato and chop. Chop raw mango, cucumber and onion also. 4. Toss brown channa, roasted veggies, chopped raw veggies together. Season with red chilli powder, cumin powder, salt and a wee bit of sugar. Squeeze a lemon for extra zing! There you have it. A colourful, amalgamation of textures and flavours in one bowl.
