Creamy corn and spinach sandwich
Instructions
  1. Heat a pan and add 2 tsp butter to the pan. When the butter melts, add spinach and saute till it shrinks and turns a dark green – about 1 to 2 minutes. Add corn and fry further for about a minute. Turn heat to low and sprinkle maida/all purpose flour over the corn and spinach and mix well until the maida coats the corn and spinach – 1 min. Pour in milk and mix until the corn-spinach-maida mixture is uniformly incorporated and there are no lumps. Add salt, pepper and sugar and mix well. Keep stirring until the mixture thickens and comes to a thick, spread-like consistency. Switch off and allow to cool for 5-10 minutes.
  2. Spread the creamy corn & spinach mixture on 4 bread slices. Close with the other 4 bread slices. Spread some butter on the outer sides of the sandwich. Place on a tawa or in a toaster and toast until both sides are golden. Slice and serve. Enjoy!
