Good chewy cookies and ice cream could come together harmoniously in an irresistibly creamy, fudgy way in these ice cream sandwiches. They’re super fun to make with kids!

Instructions
  1. Cream butter and sugar in large bowl. Add eggs and vanilla; blend well. Combine flour, cocoa, baking soda and salt; blend into a creamed mixture.
  2. Press dough onto a cookie sheet to 1/4 inch thick. Bake at 350 degrees for 13-16 minutes. Dough will puff during baking and flatten out as it cools. Let cool for 15 minutes.
  3. Use mold to cut out the cookies on the sheet. Before removing the mold, press template firmly into cookie to imprint plate design. Let cookies cool completely. Freeze for 30 minutes or more.
  4. To build the ice cream sandwiches, place one cookie in the bottom of the mold, imprinted side down. Add one scoop of your favorite ice cream. Put second cookie on top, imprinted side up. Use template to push the ice cream sandwich through the mold. Freeze ice cream sandwiches for 30 minutes. Enjoy!
  5. If you don’t have these sandwich molds you can still bake two sheet-sized cookies, scoop ice cream onto one cookie layer, sandwich with the other cookie layer, freeze and then cut into neat rectangles.
