Instructions
  1. Clean and devein prawns. Set aside. Grind ginger and garlic to a paste. Set aside.
  2. To a large kadai or pan, add oil. When oil turns hot add the mustard seeds and let splutter.
  3. Add the chopped onions and fry until they start turning golden around the edges. Add the ginger garlic paste and fry for about 3-4 minutes.
  4. Add the chopped tomatoes to the pan and fry until they turn mushy. Add turmeric, salt and chilli powder and about half a cup of water. Bring to a boil.
  5. Tip in the cleaned, deveined prawns. Mix well. Cover and lower heat to medium-low. Cook for about 10-12 minutes checking in between and stirring the prawn masala.
  6. Open the lid, turn heat to high and cook until the masala is nice and thick. Make sure to constantly scrape the bottom of the pan and mix everything up. Switch off. Serve hot! Enjoy!
