To a large wok/kadai, add sesame oil. When the oil turns hot, add the whole dry red chillies followed by crushed garlic and ginger. Fry on high heat for a minute. Add the carrot sticks and fry for 2-3 minutes. Add in the chopped mushrooms and fry for another 3-4 minutes. Add the chopped zucchini and fry for a minute. Add in soy sauce, red chilli paste and salt. Mix well and toss for another minute.
