Schezwan noodles
Instructions
  1. Break up the noodles into strands. Heat a pot of water to a rolling boil. Switch off and dump the broken up noodles into the hot water. Let soak for 5-7 minutes or until the noodles are softened. Drain the water, place the noodles in a colander and rinse the noodles in tap water. Set aside.
  2. To a large wok/kadai, add sesame oil. When the oil turns hot, add the whole dry red chillies followed by crushed garlic and ginger. Fry on high heat for a minute. Add the carrot sticks and fry for 2-3 minutes. Add in the chopped mushrooms and fry for another 3-4 minutes. Add the chopped zucchini and fry for a minute. Add in soy sauce, red chilli paste and salt. Mix well and toss for another minute.
  3. Add in the cooked noodles and gently mix everything up. Taste and adjust seasoning. Switch off. Garnish with chopped green onions. Serve.
